Expense Types not being displayed for newly created categories

Symptoms
Newly created expense types not displaying in Opportunity drop down but visible in project budget.

Reason
Expense types containing special characters such as & / > < won't display in some areas of the application.

Resolution
Remove the special characters in the expense type names and they will appear in the opportunity expense drop downs.
