If a conflict occurs on one mapped field on an artifact, do we synchronize the remaining fields that aren’t in conflict or does that one conflict block the rest of the fields from synchronizing?

Answer

If a conflict occurs, all field updates on the artifact are blocked. However, if different fields (that aren't mapped to each other) are changed simultaneously on both sides, all changes will get merged.
